Waxy or floury potatoes: choose the texture you need
Potato salad, mash and crisp side dishes ask different things of the same ingredient.

Potato salad needs slices that hold together, while mash needs pieces that break down readily. The cooking description on the packet is therefore more useful than skin colour alone. Waxy, all-rounder and floury describe practical tendencies rather than a cooking time accurate to the minute. Size, storage and the chosen method also affect the result.
Use waxy potatoes for defined shapes
Waxy varieties stay relatively compact as they cook, making them a good starting point for potato salads, many gratins and fried pre-cooked potatoes. Slice carefully after cooking and assess the particular variety. A potato that remains raw at the centre is not properly cooked for salad simply because its packet calls it waxy.
Use floury potatoes for a light texture
Floury varieties break down more easily and often suit mash or light potato doughs. Cook in even pieces, drain and allow excess moisture to steam away briefly. Mash or rice them rather than working them for a long time in a high-speed blender. Excessive processing can create a gluey texture that extra milk will not simply undo.
Make sensible use of all-rounders
All-rounder potatoes are a versatile starting point for soups, oven dishes and various sides. That does not mean they produce the same result in every specialist recipe. If a method specifies a particular type, begin with that. For everyday cooking, a middle-ground variety can be practical when one shopping trip needs to supply several different meals.
Cut pieces to similar sizes
One large potato and three small ones do not necessarily finish cooking together. Divide large potatoes or group similar-sized ones. With peeled cubes, an even edge length helps. For ordinary boiling, start in cold water and heat together unless the recipe specifies another approach. This gives the pieces a more even increase in temperature.
Check the centre deliberately
Towards the end of the suggested time, pierce a larger piece with a small knife or skewer. There should be no hard core. A salad potato should still hold together, while one for mash can break more readily. Adjust timing to the size rather than draining large pieces according to a time intended for small cubes.
Reduce moisture before frying
For fried potatoes, let pre-cooked potatoes steam dry and firm sufficiently before slicing. Wet surfaces make browning harder. Fry in batches and leave the slices undisturbed for part of the cooking time. An oven dish instead has its own liquid quantity, slice thickness and timing. The same potato variety needs a different sequence for a different dish.
Kitchen questions
One more question?
Can floury potatoes make potato salad?
They break more easily. If they are all you have, cook carefully and mix gently; expect a softer result with less clearly defined slices.
Does red skin reliably mean waxy?
No. Skin colour alone does not reliably identify cooking behaviour. The variety and cooking description on the packet are more useful.
Why has my mash become gluey?
Long, fast blending can damage the texture. Use a ricer or masher and incorporate warm liquid in small portions.
