Pita inflates in a hot oven through steam. It needs even thickness and an intact surface. Small tears or excessively thin spots can prevent a complete pocket forming, although the resulting bread is still usable. The timing includes the stated rises, which can take longer in a cool kitchen. Watch volume and dough tension as well as the clock. Weigh flour and liquid, keeping extra dusting flour separate from the measured dough ingredients.
Method
Step by step
- 01
Mix
Combine flour, water, yeast, salt and oil.
- 02
Develop the dough
Knead for about eight to ten minutes by hand or at low mixer speed. The dough should become cohesive and elastic. Brief pauses help if the mixture still tears readily while you are working it.
- 03
Let rise
Cover and rise for 60–75 minutes until approximately doubled.
- 04
Shape
Shape eight balls and rest for ten minutes. Roll evenly four millimetres thick, cover with a cloth and rest for ten minutes.
- 05
Bake
Preheat tray or stone at 250°C conventional for at least 25 minutes. Bake in batches for 5–7 minutes until inflated and lightly spotted with brown.
- 06
Cool
Let steam escape briefly on a rack, then wrap in a clean cloth. Open the pocket carefully before filling and watch for trapped hot steam.
Times are a guide. Your hob, oven and ingredients affect the result; use the cooking cues as well as the clock.
Ingredients and dough texture
A hot baking surface matters more than a deeply browned top. Excess baking dries the thin walls. Load quickly so the oven does not lose unnecessary heat between batches.
Serving and storing
After a brief release of steam, wrap in a cloth. Open pockets carefully once hot steam has escaped. Fill with salad, hummus or roasted vegetables. Open the oven only briefly between batches. An inflated pita does not need to become deeply dark. Remove once its walls have set and preserve softness under a cloth rather than waiting for a thick crust to develop.
Kitchen questions
One more question?
Why is there no pocket?
Uneven thickness or an insufficiently hot surface are common causes.
Can I freeze them?
Yes, pack fully cooled pitas airtight and warm briefly later.
