Separated eggs give these waffles a light centre and a lightly crisp surface. The batter contains butter and milk but remains thick enough to bake evenly in the hot iron. Fresh strawberries make a simple topping without weighing the waffles down. The yield assumes a medium rectangular waffle maker; heart-shaped or very deep plates change the number. Placing hot waffles separately on a rack keeps their surfaces crisp for longer. Stacking traps steam and quickly softens them. For the best texture, serve each batch soon after it comes out of the iron.

Method

Step by step

  1. 01

    Prepare iron and fruit

Fully preheat the waffle maker according to its instructions. Wash and dry the strawberries before removing their tops and halving them. Set aside until serving. Separate the eggs and use a grease-free bowl for the whites.

  2. 02

    Mix the butter base

Cream butter and sugar, then beat in the yolks individually followed by the vanilla. Combine flour, baking powder and salt. Briefly mix into the butter alternately with the milk until the batter is smooth and thick but pourable.

  3. 03

    Fold in the whites

Whisk the whites to soft, stable peaks. Stir one-third into the batter to loosen it, then gently fold in the remainder with a spatula. Avoid vigorous beating, which removes the trapped air.

  4. 04

    Bake in batches

Lightly oil the plates if needed. Add enough batter to cover the surface when closed without overflowing. Shut the lid and bake for about three to five minutes, depending on the iron. Wait until the strong flow of steam subsides before opening.

  5. 05

    Serve crisp

Carefully lift out golden waffles and place separately on a rack. Serve with strawberries and a little icing sugar. If several batches need to wait, hold briefly on a rack in an oven at 100°C conventional.

Times are a guide. Your hob, oven and ingredients affect the result; use the cooking cues as well as the clock.

Finding the right portion

Start with a smaller first portion and adjust to your own iron. Do not scrape overflow from hot plates during cooking. Once cool, clean according to the manufacturer instructions.

Colour and release

A waffle that still sticks when opened cautiously often needs more time. Avoid pulling the plates apart abruptly. Excessive heat browns the outside while a thick centre stays wet; lower the setting if necessary.

Kitchen questions

One more question?

Can the finished batter wait?

Immediate baking works best because it contains whipped whites. For advance preparation, weigh the dry ingredients and prepare the strawberries, then whisk whites just before baking.

Can I freeze waffles?

Yes. Cool completely and freeze separately. Reheat in a toaster or hot oven, adding strawberries and icing sugar afterwards.
