Sauerbraten starts two days before dinner. Beef rests in a chilled spiced vinegar marinade before gentle braising. This version makes a balanced, moderately sharp sauce without raisins. Vinegar should remain noticeable without overwhelming the meat. A casserole with a close-fitting lid prevents excessive evaporation and makes the cooking easier to control. Allow 48 hours for marinating in addition to the cooking time shown. A longer braise cannot replace that preliminary rest, and the meat must remain refrigerated throughout the marinating stage.
Method
Step by step
- 01
Cool the marinade
Simmer vinegar and water with one roughly chopped onion, sliced carrot, bay leaf, peppercorns and juniper for five minutes. Cool completely. Place the beef in a close-fitting container and cover with the cold marinade.
- 02
Marinate under refrigeration
Cover and refrigerate for 48 hours, turning twice. Keep the meat cold the entire time. Lift it out before cooking and pat thoroughly dry. Strain the marinade, reserving its liquid and vegetables separately.
- 03
Brown the meat
Heat oil in the casserole. Salt the beef and brown on all sides for eight to ten minutes, then remove. Dice the second onion and brown it with the drained marinade vegetables for five minutes. Add 200 ml marinade and bring to the boil.
- 04
Braise patiently
Add stock and beef. Cover and cook over very low heat for two and a half to three hours. Turn twice and check the liquid level. A fork should enter easily; extend the time if needed without increasing the heat sharply.
- 05
Balance the sauce
Remove the beef. Crumble the bread into the sauce and simmer for ten minutes. Press through a sieve. Adjust with a little sugar, pepper and, if needed, extra boiled marinade. Slice the beef across the grain and serve with the sauce.
Times are a guide. Your hob, oven and ingredients affect the result; use the cooking cues as well as the clock.
Controlling the acidity
Avoid pouring all the marinade into the casserole at once. Keep some as a seasoning reserve. If the sauce is too sharp, dilute with stock. Sugar softens the perception of acidity rather than removing it, so use small quantities.
Cooking ahead
Cool the cooked beef promptly and refrigerate covered in its sauce. Slice it cold the next day and gently reheat thoroughly in the sauce. Prepare dumplings and red cabbage separately to retain their textures.
Kitchen questions
One more question?
Which container suits the marinade?
Glass, porcelain or food-safe plastic. Avoid uncoated aluminium, which can react with the acidic liquid.
Can I use a smaller joint?
Yes, checking for tenderness sooner. Choose a smaller container so the marinade still covers the beef without making unnecessary extra liquid.
