A vegetable risotto should flow gently while retaining recognisable grains. Add the liquid in portions and adjust the consistency once more at the end. Finely diced carrot and pepper cook with the rice, while peas need only a few minutes. This recipe uses vegetable stock throughout and does not call for wine. Butter and hard cheese finish the dish. Judge the grains rather than following a rigid timer: their outsides should be tender, with a slight firmness at the centre. Warm bowls help preserve the loose texture until the food reaches the table.

Method

Step by step

  1. 01

    Heat stock

Finely dice the onion. Cut carrot and pepper into roughly 5 mm pieces. Heat the stock in a second saucepan and keep it just below a simmer.

  2. 02

    Toast rice

Warm the oil in the wide saucepan over medium heat. Soften onion for 3 minutes, then cook carrot and pepper for 2 minutes. Add rice and stir for 1 minute until glossy.

  3. 03

    Add stock gradually

Pour in 200 ml hot stock. Simmer gently, stirring regularly. Once the rice has absorbed most of the liquid, add another portion of about 100 ml.

  4. 04

    Add peas

Repeat for 16–20 minutes. Add the peas after 14 minutes. Taste a grain: the outside should be soft with slight resistance in the centre.

  5. 05

    Finish with butter and cheese

Remove from the heat. Beat in butter and cheese, loosening with more stock if needed. Rest for 2 minutes and adjust the seasoning. The risotto should slowly spread when the pan is tilted.

Times are a guide. Your hob, oven and ingredients affect the result; use the cooking cues as well as the clock.

Let the rice determine the liquid

The amount needed varies with rice variety, pan width and heat. Keep extra hot liquid available. Cold stock interrupts cooking. A vigorously boiling pan evaporates liquid faster than the grains can absorb it, making gentle simmering easier to control.

Change the vegetables thoughtfully

Small courgette cubes can replace the pepper; add them about 8 minutes before the end. Tender vegetables need less cooking than carrots. Avoid holding the finished risotto for long because it continues absorbing moisture and becomes stiff. Serve in warm bowls immediately after its brief rest.

Kitchen questions

One more question?

Must I stir constantly?

Regular stirring is enough, especially after adding stock. Do not let the rice catch on the bottom. Excessively vigorous stirring can damage the grains.

Can I use ordinary long-grain rice?

It makes a different dish because it releases less suitable starch. Choose a variety explicitly sold as risotto rice for this creamy method.
