Cauliflower develops nutty flavour and dark edges in a hot oven. This version coats florets with turmeric, cumin and ground coriander, using a little oil to hold the spices directly against their surfaces. Dry the florets thoroughly and give them room on the tray. Crowding causes them to soften in trapped steam instead of roasting. Chilli is optional. Add lemon juice only after baking so the dry surfaces have time to brown first. The quantities make four side portions alongside rice, lentils or a mild yoghurt dip, with the browned edges best enjoyed immediately after cooking.
Method
Step by step
- 01
Divide cauliflower
Heat the oven to 220 °C conventional heat. Divide cauliflower into similarly sized 3–4 cm florets. Thin slices of tender stalk can also be included.
- 02
Dry florets
Wash and dry thoroughly, blotting water trapped between branches with a clean towel. Wet florets dilute the spice mixture and roast less effectively.
- 03
Coat with spices
Mix oil with cumin, coriander, turmeric, optional chilli and salt in a large bowl. Add cauliflower and turn carefully until all surfaces have a thin coating.
- 04
Roast on the tray
Spread on the tray, placing cut surfaces down where possible. Roast on the middle shelf for 25–30 minutes, turning once after about 15 minutes.
- 05
Check and add lemon
Check with a fork: stalks should be tender and edges deep golden. Larger florets may need longer. Drizzle with lemon juice and serve immediately while the edges remain dry.
Times are a guide. Your hob, oven and ingredients affect the result; use the cooking cues as well as the clock.
Distribute the spices
Turmeric gives strong colour but is not the entire seasoning. Cumin and coriander provide the aromatic base. Mix powders into oil rather than sprinkling uneven piles on individual florets. Do not scrape burnt spice deposits from the tray over the finished portions.
Leave roasting space
A large cauliflower may need two trays. If using two levels, follow the oven guidance for fan heat and swap trays if necessary; timings may change. One tray with a loose single layer is the reference for the timings here. Avoid building a deep pile.
Kitchen questions
One more question?
Can I use frozen cauliflower?
Yes, though it usually carries more surface moisture. Follow packet preparation guidance and allow longer roasting. Fresh cauliflower makes dry browned edges easier to achieve.
Can I roast it whole?
That is a different method with a considerably longer cooking time. Divide into florets here so heat and spices reach more surfaces.
